OCEAN TROUT WITH KIWIFRUIT SALSA

Chicken fillets or thighs can easily be substituted for the fish. This recipe is ideal for a light luncheon by breaking the cooked fish (or chicken) into chunks and serving San Choy Bau style in lettuce cups.

White chocolate can easily be substituted for the dark chocolate if you prefer. If you prefer a less sweet parfait, natural yoghurt may be used instead. If you prefer, you can omit the egg yolks and use only the whites.

The apple juice may replaced by milk – low fat cow’s milk, almond milk or coconut drinking milk. For added creaminess, add yoghurt or diced avocado; chia seeds or spirulina can also be added
